Harvesting

Capture is to capture the larvae in the Fouras parks, after laying, using cups on which they are fixed.

These larvae can only swim vertically and are therefore dispersed by currents. After 3 weeks of life in plankton, they will seek to settle on a support and become true oysters from the point of view of appearance. At this point, they are now called "spat". After 18 months, we need to remove the young oysters from their supports in order to transport them to the breeding farms.
